Cut out cross-contamination. HACCP legislation requires every type of cheese to be cut with its own knife. This red variant is meant for washed rind cheeses. This knife, meant for soft cheeses, has a high handle to keep your hand free of the cutting board. Thanks to the longer blade, you can cut a wedge of cheese with one slice. We also supply the corresponding cutting boards with an identical color coding for each type of cheese. Excellent point!
